YPTE is delighted to be working with Eurostar in a new partnership with two leading European environment and sustainability organisations, GoodPlanet Foundation in France and GoodPlanet Belgium together with Eurostar's Culinary Director for Business Premier, Michelin-starred  chef Raymond Blanc OBE.  Create a Sustainable Business Premier Dish is an exciting opportunity for young people in the UK, France and Belgium who have an interest in environmental issues and cooking.  It's a unique competition which offers young people the opportunity to develop a main course to be served on board Eurostar's most prestigious class of service.  It's vital that the dish is not only delicious, but also that it is made from seasonal and sustainable ingredients that where possible have been locally sourced.  The competition is open to entries from individual students from the age of 15 to 19 years old in the UK, France and Belgium.  The 2018 competition will launch early in the New Year.  

The winners of the 2017 competition traveled to the Gare du Nord in Paris early in Novembr 2017 to receive their awards from Raymond Blanc OBE.  Congratulations go to 17 year-old Mathieu Coiffard, a student from Perigueux in France, whose winning dish, chosen from all the entries in the 2017 competition will be served on rotation in Business Premier carriages for a period of three months.  He will be meeting again with Raymond Blanc in the kitchens of Le Manoir aux Quat' Saisons to develop the dish for service in Business Premier.  This is without doubt a fantastic opportunity for young people to kick-start a career in the hospitality industry.
